Tiramisu

2 eggs
18oz mascarpone cheese
3oz sugar
18oz sponge finger biscuits
1/2 pint strong black coffee
3-4 tablespoons of your tipple of choice (coffee liquer etc)
2-4 tablespoons of cocoa
Separate yolks and whites of the eggs. Beat egg yolks and sugar until light. Beat i cheese, mixing until smooth.Whisk egg whites until stiff, but not dry. Fold in to cheese mixture to resembled softened cream. Mix spirit in to cheese mixture. Dip fingers in to coffee and arrange half of them in a dish. Spread half the cheese mixture over. Continue with the rest of the fingers and cheese mixture. Sprinkle cocoa over and store in the fridge. Make at least one day before it’s needed.
